 Post subject: Whole Hog quesitons

Who has done one on an off-set? I have 2 planned for this season (so far, fingers crossed!!!) and they will be first... Looking for any tips that anyone would care to offer...

Think about rotating it halfway through the cook since one end of the cooker is hotter. Does your cooker have a one-piece shelf on the bottom?
